Over the years, root vegetables have been done hard by. Sadly boiled and completely under seasoned. We have brought the humble carrots and parsnips into the star of the show with an incredible makeover. Slowly roasted in honey and caraway seeds, you won’t believe how much flavour these two ingredients bring out in these amazing root vegetables. Add a little smoked paprika too for an added kick!
Turn on your oven to 190/160 fan. Add a drizzle of olive oil into a casserole dish.
Peel and trim your parsnips and carrots (the top and tips), then add to a mixing bowl, along with the honey, carraway seeds. Season generously with salt and black pepper.
Bake in the oven for 1 hour 10 minutes, turning every half an hour.
