Heat the milk and cheese together until the cheese has melted, then stir in the mustard powder, breadcrumbs and flour. This should create a thick sauce.

Remove from the heat and stir in the eggs. Add the Tabasco and Henderson’s Relish to taste and season with salt and pepper.

Toast the bread on both sides and place in a heatproof serving dish. Grill the bacon until crispy, place 2 slices of bacon on each slice of toast, pour the rarebit mixture over and put under a hot grill until golden and bubbling.

Serve with Raydale apple and raisin chutney.
