Making your own canapés are a fun and tasty way to celebrate this season. These Yorkshire Rarebit Canapé bites are a delicious treat to ring in the New Year and are guaranteed to be a hit with all your guests, whether young or old, meat eaters and vegetarian. Made with local, day old sourdough from our friends at Vanora’s Bakery, robust Yorkshire Golden Ale and creamy, flavourful Traditional Swaledale Cheese, we love these little morsels with a tasty Yorkshire chutney like Rosebud’s tomato or Raydale’s apple.

If you’re looking to pair these with some other easy items why not try our local Dandy Dans by Lishman’s in Ilkley, a savoury cured meat which could be sliced up on a charcuterie platter with our Finlater’s pate, a cheesy Yorkshire platter and air dried Yorkshire ham.

Method

Over a gentle heat make a paste with the mustard powder and a little splash of the ale. Then add the rest of the ale, butter and Henderson’s Relish, stirring occasionally for 5 minutes until the butter has all melted.

Add the cheese and continue to stir occasionally for a further 5 minutes until the cheese has melted and is smooth. Making sure to not boil the mixture.

Season with salt and pepper then set aside to cool slightly and separate your eggs. Beat the egg yolks into the warm mixture.

Turn the grill onto high and toast your slices of bread on each side.

Remove and allow to harden slightly on a cooling rack, before pouring cheese mixture over.

If you’d like it extra cheesy crumble a bit of extra cheese on top.

Pop back under the grill until golden and bubbly.

Slice into quarter triangles and serve your Yorkshire Rarebit Canapé bites with a helping of chutney.
